CTZ hops refer to a trio of similar hop varieties – Columbus, Tomahawk, and Zeus – collectively known by this name. They are a high-alpha hop variety prized for their bittering capacity and pungent hoppy aroma, including earthy, spicy, and citrus notes. CTZ hops are widely used in American pale ales, IPAs, stouts, and lagers. They are known for their high yields but do not store well, so they must be quickly processed into pellets or other concentrates to prevent oxidation.
Developed in the late 1970s by Charles Zimmerman, the parentage of this hop variety is unknown, although it is believed to have originated from Brewer’s Gold and several undisclosed American varieties.

CTZ Hop Substitutions
Replacing one hop for another is seldom straightforward but sometimes you don’t have the right hop or the right quantity of hops for the beer you want to make. For those situations, we have made a comprehensive list of hops to substitute on brew day.
These substitutions aren’t perfect as hop chemistry is pretty complex.

For the most part, any hop could have a place in just about any beer style. Based on popular beers, historical usage, and our own preferences, we would recommend using CTZ for IPA, New England IPA, Pale Ale, Wheat Beer, Golden Ale. That being said, experiment and see what works best for you.
