Like peanut butter and jelly, tomatoes and basil are a match made in heaven. The classic combination of mozzarella, tomatoes and basil is known as caprese, which takes its name from Italys island of Capri. This grilled sandwich version of the classic caprese salad is a slam dunk match for our Honey Basil Ale, brewed with fresh whole leaf basil and clover honey. The fresh basil in the beer really stands out with every cheesy bite of pesto and fresh basil. Caprese Panini Ingredients 2 slices rustic brea bread, sliced 1/2 inch thick 2 slices mozzarella cheese 2 leaves of fresh basil 3 slices of tomato 2 tbsp pesto 1 tsp. balsamic vinegar Salt and freshly ground pepper Olive oil for brushing Instructions 1. Preheat an electric panini maker according to the manufacturers instructions. If you don't have a panini maker, no worries. You can get a similar panini-like sandwich by using a really hot skillet or frying pan. For other options, visit: http://paninihappy.com/how-to-make-panini-without-a-panini-press/ 2. Brush one side of each bread slice with olive oil. Lay the slices, oiled side down, on a clean work surface. 3, Spread the top of each slice with 1 tbsp pesto. Place the cheese on one slice and top with the tomato slices. Drizzle with the vinegar and season with salt and pepper. Top with the basil, then with the other bread slice, oiled side up. 4. Place the sandwich on the preheated panini maker and cook according to the manufacturers instructions until the bread is golden and the cheese is melted, 3 to 5 minutes. Transfer the sandwich to a cutting board and cut in half. Serve with a tall glass of Honey Basil Ale and ENJOY! ________________________________________________________________________________ Bison Brewing Company is an official Meatless Monday organization dedicated to lowering its carbon footprint by choosing to abstain from meat on Mondays.
Salt absolutely loves hops, making salty broths and soups a great match for pale ales and IPAs. This is why we love pairing both sushi and Vietnamese Pho with our new Hop Cuvee (West Coast Ale). The saltiness of the soup heightens the hop profile of Hope Cuvee—making the citrus, pine and tropical notes of the organic hops really shine through. The cooling nature of the hops also compliments the spiciness of the fresh ginger and curry. The crisp and refreshing nature of Hop Cuvee acts as a palate cleanser for this dish, making every bite taste like the first. Veggie Pho with Ginger Curry Broth Ginger Curry Broth Ingredients 6 c. vegetable broth (or water + bouillon cubes) 6 cloves of garlic, sliced 8-10 slices raw ginger 1 TBSP red curry paste 2-3 vegetable boullions Bring ingredients to a boil, reduce and simmer for 30 minutes. Veggie Pho Ingredients (makes 2) 1/2 package rice noodles, cooked al dente 1 package tofu, sliced 1 jalapeno or serrano chile, thinly sliced 1 carrot, thinly juliened 1/2 bell pepper, thinly juliened 1/2 c. broccoli florets 2 c. kale or spinach fresh basil & bean sprouts for garnish Instructions 1. Prepare the rice noodles according to the package, but be careful not to overcook. Strain and set aside. In a large frying pan, sautee the tofu until golden brown and crispy. 2. In two larger than normal bowls, layer the raw ingredients, starting with the kale (or spinach), then the noodles, the tofu and raw veggies. Laddle the hot steaming broth over the all the ingredients, which will begin to poach. For a spicier soup, stir in your favorite chili sauce. 3. Wash it all down with a Hop Cuvée. Cheers! ________________________________________________________________________________ Bison Brewing Company is an official Meatless Monday organization dedicated to lowering its carbon footprint by choosing to abstain from meat on Mondays.
Hey friends! A lot of things are changing over here at Bison, and I just wanted to take a minute to tell you all about them! This month, I made the executive decision to discontinue my Organic IPA (in 6-packs, not 22 oz.). Not because it wasn't good, but because the IPA market has just gotten too crowded and over-satured, making it a very tough category to stand out and compete in. Instead, I'm choosing to focus on the ever-growing demand for more drinkable, lower alcohol beers. And I'm excited to announce that I will be replacing IPA with Hop Cuvée—a West Coast Ale brewed with a blend of the season's best organic hops. Not quite a pale ale and definitely not an IPA, Hop Cuvée was designed for hop lovers seeking a more sessionable and refreshing option. At a balanced 50 IBUs and 5.5% abv., Hop Cuvée won't wreck your palate You will also notice that the look and feel of Hop Cuvée is much different than anything Bison has released before. This is because we've also decided to give the Bison brand a mini-facelift with the release of the new beer. All of bottle labels will change to match the new design and Chocolate Stout will be released in a brand new package in mid-April. But no worries, the award-winning Chocolate Stout recipe won't change. In the coming months, the recipe for both the Chocolate Stout 22oz. and the IPA in 22oz. bottles will change as well–think "bigger." I've been wanting to make these changes for almost a year now, and I really hope you will like it. You will know when we change the beers because each will have a sexy new label and name. For example, I plan to increase the alcohol and bitterness of the IPA 22oz., showcasing the new organic hops I got my hands on with a fun name and equally fun label design. Bison will also be releasing some new seasonals in 4-packs this year, starting with Saison de Wench in May. Lastly, we are planning on doing a few more collaborations with other breweries. Keep your eyes and ears peeled for the new packaging as well as our new prodcuts. And I always appreciate your feedback, whether it be good or bad, so share it with me on Twitter, Facebook, Instagram or via email. Cheers, Organic Dan Share your Hop Cuvée experiences with us on social media! #bisonbrew

Eight craft beer brands from all around the San Francisco Bay Area have banded together to on a unique and innovative venture – the Band of Gypsies Collaboration Beer Project. As the name suggests, all the breweries involved, save for one (the host), are gypsy brewers. The Brewers Association (BA) defines this type of brewery as a contract brewing company—essentially a business that hires another brewery to produce its beer. The contract brewing company is often responsible for recipe development and handles the marketing, sales and distribution of the beer. Bison is honored to be amongst the members. Our partners include Calicraft Brewing Co., Highwater Brewing, Lucky Hand, Oakland Brewing Co., Pacific Brew Labs, Triple Voodoo & Uncommon Brewers (host). All of us have headquarters and live in the Bay Area. In honor of San Francisco Beer Week 2013, the Band of Gypsies is releasing its first collaboration beer, aptly named The Belgian Tramp – an organic Belgian Quad brewed with house-made candy sugar, California-grown Mission figs, raisins and dates. Boasting a hefty 10.5% abv., Belgian Tramp is sticky sweet and boozy with rich flavors of dark fruit, roasted malt and caramel, a moderate hop bitterness, and a smooth, dry finish. For more information, watch the awesome video below, developed by good friend and very awesome videographer, Carlo Overhulser of The Beer Channel. About The Beer Channel The Beer Channel came about from a simple observation; there are networks on television dedicated to food, wine, travel, and education, but nothing to celebrate one of the world's most revered beverages or the folks behind the scenes that work hard to bring it all together. It began as a share and review blog and then quickly moved to just video due to the overwhelming demand for content on mobile devices. Specific shows were also done in a test market format on public access television in Santa Cruz, CA. The feedback was extremely positive, and the working goal is to work with the right investors to launch The Beer Channel nationally. There are currently four programs in production: Have Beer, Will Travel Brü Appetit The Beer Hike Brewmaster Spotlight Carlo Overhulser is originally from the Washington D.C. area. He currently lives in Santa Cruz, CA. He is a history major, and his background consists of A/V, tech, and major recording studio engineering.
This is the section of the blog where Bison's owner and brewmaster, Dan Del Grande, airs his grievances and rants about the change he wishes to see and inspire in the world. Please help us spread the message of these very important issues by sharing his rants on Facebook, Twitter and your other favorite social media platforms! Xoxo, Bison. Happy 2013, my friends! Forget about losing weight this year! I have an easier challenge for you–curb your plastic habit. The average American produces a half-pound of plastic waste every day. Can you reduce your personal contribution by half? Much of the waste plastic ends up in The North Pacific Gyre, a swirling vortex of plastic in the Pacific Ocean. Most plastics decompose within a year of entering the water, turning into small particles and leaching toxic chemicals such as bisphenol A, PCBs, and derivatives of polystyrene. The ever-increasing concentrations of this degrading plastic, along with nearly invisible plastic and polymers from micro-pellets used in abrasive cleaners, is ingested by small fish and then enters the food chain of larger fish we catch & eat. People ingest plastic from the foods we eat and the things we drink. Plastic can have direct toxicity, but mostly acts as an endocrine disruption, which can lead to cancers, birth defects, immune system suppression and developmental problems in children. Plastic has been linked, though not conclusively, to everything from breast cancer to obesity, from attention deficit disorder to genital abnormalities. Plastic may make life “easier” — but it is far from being harmless. So, this year, I challenge you to take action. Reduce your dependency on plastic and stop buying new plastic altogether. Bringing your own reusable bags to the grocery store is a good step, but I know you can do more. Use stainless steel water bottles instead of buying plastic containers. Instead of plastic food and personal care items, can you select a brand that comes in glass or cans or paper packaging? I use Dr. Bronner’s Magic soap that comes in paper. I also buy bulk ingredients from the grocery store, reusing containers at home. When you buy a new item, look for non-plastic alternatives, such as my fancy new Filson computer bag/briefcase. Visit to-goware.com and buy reusable bamboo utensils and lunch boxes. Buy pet toys made from natural materials instead of plastic. Use old newspapers as wrapping material, instead of styrofoam and bubble wrap. I haven’t found good alternatives yet for shampoo and shoes, but I’m working on it. Finally, take care of what plastic you already have so there is no need to buy more. Pick up a copy of the book Plastic Free — How I Kicked the Plastic Habit and How You Can Too and visit plasticfreeguide.com.
Happy Meatless Monday! The holiday season is upon us, which means there is no better time to cook with our ever-popular Gingerbread Ale. Both our Chocolate Stout and Gingerbread Ale make excellent reductions that can be used as a wonderful beer glaze for many things – especially tempeh and roasted sweet potatoes. Gingerbread Ale-Glazed Tempeh Strips Ingredients 2 (8-ounce) packages tempeh 1 cup vegetable broth 1 cup Gingerbread Ale Gingerbread Ale Glaze Instructions Preheat oven to 425°F. In a skillet, poach the blocks of tempeh over medium heat in the beer and vegetable broth, uncovered, for roughly 10-15 minutes, until liquid is absorbed. Cut tempeh into 1/4-inch strips. Coat each strip with glaze on both sides, then place onto a parchment paper lined baking sheet. Bake tempeh strips 7 minutes. Remove from oven, glaze strips on both sides again. Return to oven and bake for 5 minutes. Remove strips from oven. Glaze one more time on both sides before serving. Gingerbread Ale Beer Glaze Ingredients 1 (12 ounce) bottle Bison Organic Gingerbread Ale (at room temperature) 1/2 cup honey 1/4 cup brown sugar 2 tablespoons mustard powder Instructions Mix all ingredients in a sauce pan over medium heat. Cook until liquid is reduced by about half, remove from heat and cool. Note that the mixture will continue to thicken as it cools. Cheers, Bison Organic Beer

Today's Meatless Monday recipe comes to us from one of our favorite vegetarian food bloggers, the ever-lovely Leslie Durso. Cute and witty with a penchant for good food and the environment, it is easy to see why the Bison team is a big fan of Leslie and her Veggie Dreamgirl blog! Today, we borrowed her recipe for Quinoa Stuffed Sweet Potatoes. Loaded with lots of super foods and great flavor, this hearty fall recipe is sure the satisfy vegetarians and meat-lovers alike. Cranberries, kale and sweet potatoes all scream "fall" — which is why we chose to pair this dish with Bison's fall and winter seasonal beer, Organic Gingerbread Ale. The earthy flavors of the quinoa are a perfect match for the dark and roasty flavors in the beer, while the sweetness in the cranberries and sweet potatoes compliment the ale's winter spice blend. Thanks again to Leslie for this awesome recipe!
